Summary Description of the Project and Its Objective
The project will involve the introduction of a new technological process, namely: production of smoked fish preceded by preliminary processing.
As part of this investment, MIRKO Sp. z o.o. has purchased the following machinery and equipment:
Stage I
- Steam generator with installation,
- Smoking and scalding chambers (2 units),
- Smoked fish packaging machine (deep-drawing roller machine),
- Smoked fish packaging machine (skin technology) (2 units),
- Weighing and labeling device for smoked fish,
- Injector,
- Fixed-weight portioning machine for fish,
- Fish gutting line,
- Fresh fish unloading device with weighing system,
- Flake ice maker (2 units),
- Fish packaging machine – flow-pack technology with BDF film (shrink barrier film).
Stage II
- Labeling and detection device for packaged products,
- Cryogenic tunnel,
- Salmonid fish filleting line,
- Dosing and packaging line for fish pastes and pâtés,
- Production planning software.
As part of Stage III implementation, the Beneficiary will purchase:
- Contamination and defect detection device for products – 4 vertical X-ray beams.
Through the purchase of the technological line for smoked fish, a new smoking production process was introduced, thereby enabling the Applicant to add new products to its offering – smoked trout and smoked salmon, while the purchase of a new fish gutting line has made it possible to conduct a new production process – fish gutting. Additionally, the purchased dosing and packaging line for fish pastes and pâtés has enabled the utilization of by-products generated during the production process and the introduction to the market of new products, not previously offered by the Beneficiary, in the form of fish pastes and pâtés.

Results
The beneficiary implemented an operation involving the introduction of a new technological process at Mirko Sp. z o.o.
As part of this operation, the beneficiary purchased:
- Salmonid filleting line with a minimum capacity of 15 fish/minute.
- Refrigerated forklift.
- Initial knife sharpener.
- Final knife sharpener.
The purchase of the aforementioned equipment and internal transport means contributed to meeting the operational criteria established during the preparation of the Grant Application, i.e., an increase in the utilization of by-products generated from the main activity related to fish product processing, the creation of new or improved products, processes, or fish processing management systems, and an improvement in safety, hygiene, and working conditions in the fish processing process. Furthermore, the beneficiary carries out its operation using products from domestic aquaculture, such as trout or salmonid fish.

Effects: The investment carried out at Mirko Spółka z ograniczoną odpowiedzialnością involved the purchase of a line for preparing, packaging, and portioning fish and aquaculture products based on TRAYSEALER and SKIN technology – No. 1, an automatic film wrapping machine using thermal sealing technology with vacuum and gas for sealing individual packages, along with a device for changing sealing modules, a preparation and packaging line, control equipment, and accompanying devices – dynamic scales with metal detectors (2 sets).
The purchase of the above equipment contributed to the introduction of new and improved technological processes. The new technological process utilizes domestic aquaculture products.

Results
The investment carried out at Mirko Sp. z o.o. involved the purchase of machines for packaging fresh fish (2 units), a line for weighing and labeling fresh fish (2 units), a line for weighing and labeling fresh fish, and a machine for packaging fresh fish. As a result of purchasing the above machines and equipment, an innovative production process was implemented, i.e., the manufacturing of new products not previously produced by the Enterprise. As part of the planned investment, a line for packaging fried, cooked, and pasteurized products was purchased, which contributed to an increase in the utilization of by-products generated from the main activity related to fish product processing. Domestic aquaculture products are used in the new technological process.
The new production processes implemented at the Mirko Sp. z o.o. processing plant contributed to the creation of an improved fresh fish packaging process using MAP and SKIN technology, which allowed for the production of significantly improved and new products in the form of packaged fresh fish from domestic aquaculture. The planned modernization of the MIRKO plant contributed to the improvement of production processes and enterprise management, as well as to the improvement of product quality.
